A budget-friendly way to stretch your easter feast
This soup isn’t just about using leftovers; it’s about creating a complete, flavorful meal without breaking the bank. The recipe relies on just four core ingredients – ham hock, potatoes, green beans, and pepper – demonstrating that deliciousness doesn't require an extensive grocery list.
Growing up, this ham bone soup was a staple. The aroma simmering in the kitchen was synonymous with warmth and family. It provided a nourishing, filling option for a large family, a tradition that continues to resonate.
The beauty of this recipe lies in its simplicity. A ham hock, often overlooked after a celebratory meal, lends its rich flavor to the broth. The meat easily pulls away, adding tender morsels to the soup, while the potatoes and green beans contribute hearty textures and essential nutrients.

Simple steps to a soul-warming soup
The cooking process is designed for minimal hands-on time. The ham hock simmers for hours, infusing the water with a deep, savory essence. The vegetables are added later, preserving their crisp-tender texture. A few minutes of pepper seasoning is all that’s needed to elevate the soup's profile.
One particularly appealing aspect? The soup naturally delivers a salty, savory flavor, reducing the need for added salt. This inherent flavor profile is a testament to the quality of the ham hock and a welcome departure from overly seasoned dishes.
Beyond the core ingredients, the recipe offers flexibility. Feel free to experiment with additions like carrots, onions, or even white beans to customize the soup to your preferences. The versatility ensures that it remains a go-to dish for any pantry.
Beyond the bowl: serving suggestions & storage tips
This soup begs for a side of crusty bread – perfect for soaking up every last drop of the flavorful broth. Potato rolls or cornbread are also excellent accompaniments.
Leftovers? This soup freezes beautifully, allowing for quick and easy meals on busy days. Simply cool completely, portion into freezer-safe bags, and store for up to three months. Reheating on the stovetop yields the best results, restoring the soup's comforting warmth.
This isn’t simply a recipe; it’s a return to culinary resourcefulness. It’s a way to honor leftovers and create a meal that’s both satisfying and economical – a win-win in any kitchen.
Consider this: a single ham hock can transform into a comforting bowl of soup serving a family of eight. It's a testament to the power of simple ingredients and thoughtful cooking.
Equipment: Wusthof Knives, Swivel Peeler, Large Pot
Ingredients: 1 Ham Bone with some meat still attached, 4 Medium Potatoes chopped, 2 Cups Fresh Green Beans snapped and chopped in 1-2″ pieces, Water, Pepper to taste
Instructions: Cut around the center bone in the ham, leaving a good inch or more of meat attached. Place the bone in a large stock pot and fill with water just until it covers the bone. Turn the heat to a 4-5 or medium low to medium heat. Allow the meat/bone to cook all day or at least 3-4 hours. Add more water as needed to keep the bone covered. One hour before dinner, remove the bone and meat to a cutting board, the meat should just fall off. Shred the meat and place it back in the pot, discarding the bone. Add the potatoes and green beans and place back on the heat. Allow to cook for 30 more minutes or until potatoes are tender. Add pepper to taste.
Notes: You can buy the ham hock from your local butcher if you’re craving the meal and don’t want to buy a ham. This soup freezes really well. Allow it to cool completely, place in a ziploc bag, forcing out all the air, then place in the freezer.
