2 large eggs 2/3 cup milk 1 ½ teaspoons salt 1/8 teaspoon cayenne powder 1 cup all-purpose flour 1/2 cup cornmeal 1 tablespoon sugar 2 teaspoons baking powder 3 cups corn kernels (fresh or thawed) 2 tablespoons chopped scallions 1 cup Triple Cheddar Cheese Blend (Tillamook recommended)
Instructions
Whisk together eggs, milk, salt, and cayenne in a large bowl. In a separate bowl, whisk together flour, cornmeal, sugar, and baking powder. Gently combine the wet and dry ingredients. Stir in corn, scallions, and cheese until just combined. Don’t overmix!
Heat a cast-iron skillet over medium-low heat. Add enough oil to coat the bottom. Drop spoonfuls of batter into the hot oil, flattening slightly with the back of a spoon. Fry for 2-3 minutes per side, until golden brown. Serve immediately. Enjoy!
