A warm weekend greeting!
Hello, dear friends! It’s lovely to see the warmer weather finally arriving here in Ohio. The snow is melting, and the green grass is popping up – a welcome sight! My dear friend Lynne is still with us, delightfully “stuck” due to the Rhode Island snowstorm. While it’s a slight inconvenience for her, I'm certainly not complaining about the extra company! Sending all the snow to Rhode Island to keep her here a little longer, just kidding!

Spicy broccoli: a 15-year favorite
This week on the blog, I'm sharing some recipes that are close to my heart. First up is my Spicy Broccoli! I've been making this for nearly 15 years, and it’s a guaranteed crowd-pleaser. It's surprisingly easy to prepare and delivers a fantastic combination of heat and savory goodness. A simple yet satisfying dish that’s perfect as a side.
Quick & delicious ham and cheese quesadillas
Looking for a fast and flavorful snack or lunch? My Ham and Cheese Quesadillas are the answer. The smoky ham and creamy cheese, nestled within a crispy, golden tortilla, are a delightful combination. It’s a classic for a reason, and so easy to whip up when you're short on time.
Elevate your rice with confetti rice
Don't underestimate the power of a little extra flair! Confetti Rice transforms a plain side dish into a vibrant and delicious star. I recently made it again, and it reminded me just how much I adore it. It's a simple upgrade that adds a burst of flavor and visual appeal to any meal.
Hearty irish cottage pie: a family favorite
There's nothing quite like a comforting, hearty dinner after a long day. My Irish Cottage Pie features savory ground beef, earthy carrots and peas, all blanketed in a warm, cheesy mashed potato topping. It's a classic for a reason – a truly satisfying and soul-warming meal that's perfect for feeding the family.
Homemade italian dressing: zesty and versatile
Skip the store-bought stuff and make your own Italian Dressing! This recipe is a perfect blend of olive oil, Dijon mustard, garlic, oregano, and red pepper flakes, brightened with fresh lemon juice. It's incredibly versatile – delicious on pasta salads, greens, or even drizzled over my favorite Pizza Salad! You can easily double or triple the recipe to have plenty on hand.
Grandma’s coconut chews: simple sweetness
Bringing back a little nostalgia! My Grandma’s Coconut Chews are a simple and delightful treat that I’ve been making since I was just 10 years old. Chewy coconut filling layered onto a buttery shortbread crust—it’s a recipe passed down through generations and always a hit.
The foot massager revelation
Now for something a little different! I have to share my latest obsession: a Foot Massager Machine. Seriously, friends, it’s life-changing! I rarely mention items over $20-30, and most of my favorites are under $10, but this is an exception. I've been raving about it to everyone, and even my sister bought one after trying it! If you’re on your feet a lot, deal with neuropathy, or just need a relaxing massage, this is a must-have. It's currently on sale for $129 – the price I paid a few months ago. I highly recommend it!
Musical musings: walk through fire
Lastly, a little something for the soul. I've been completely captivated by Walk Through Fire by Ben Fuller. It's a beautiful album from start to finish, and I listen to it multiple times a week. It's a powerful reminder of faith and resilience, and I especially enjoy listening to it to start my days. The lyrics, inspired by Isaiah 43:2, resonate deeply.
